Bubble Loaf


Serves: 4

2 tubes refrigerated biscuits
1/3 c. butter, melted
3/4 c. sugar
1 1/2 tsp. cinnamon
3/4 c. walnuts, chopped

Cut each of the biscuits into four pieces. Melt butter in small bowl. Mix sugar & cinnamon in a separate bowl. Dip each biscuit piece in butter then coat in cinnamon/sugar mixture. Place in a single layer in ungreased 9 x 5 loaf pan. When first layer is complete, sprinkle with walnuts. Repeat biscuits and walnuts until finished. Bake at 375 degrees for 30 minutes. Serve warm.

Tips: This is one of my favorite breakfast breads going back to when I was a kid. My brother and I loved to sit at the table and get our hands all goopy helping our mom dip the biscuit pieces. The easiest biscuits to use are usually the cheapest tube of store brand biscuits. However, larger biscuits like Pillsbury Grands just need to be cut into more than four pieces and they will work fine. To make sure that the Bubble Loaf bakes evenly I suggest leaving a tiny bit of room between the biscuit pieces when you make your layers. Also, if you have nut allergies (like we do) the walnuts can easily be left out. As an additional treat, if there is any cinnamon/sugar or butter leftover, mix them together in a small resealable bowl and keep in the fridge for use on toast or pancakes.

Tortilla Casserole

Serves: 6-8

1 c. long grain rice, uncooked
1 can (14.5 oz.) diced tomatoes & green chilies
1 can refried beans
1/2 c. sour cream
1/2 c. taco sauce
6 (12-inch) flour tortillas
2 c. shredded Cheddar cheese
Sour cream, if desired

Cook rice according to package directions. Stir in tomatoes and green chilies. In a small bowl, combine sour cream and taco sauce. Mix well. Pour a very small amount of sour cream/taco sauce mixture on the bottom of a 13 x 9 baking dish. Move dish around to coat bottom. Place 2 tortillas on bottom of dish. Spread 1/2 can of refried beans on top of tortillas. Top with 1/2 rice/tomato mixture, then 1 cup of cheese. Repeat layers ending with tortillas on top. Pour remaining sour cream/taco sauce mixture on top. Bake at 350 degrees for 35 minutes or until heated through. Top with sour cream.

Tips: I came up with this casserole for a church potluck by using ingredients I already had on hand. You can experiment with the flavor by using different flavors of refried beans and red or green taco sauce. I used mild Rotel diced tomatoes and green chilies to keep it from being to spicy for my kiddos. I also shared this recipe at Simply Sweet Home's Friday Favorites.

Good Earth Dinner Giveaway

Lately I have been trying to make more of an effort to reduce to processed foods my family consumes. I have especially been trying to avoid products that have an ingredients list a mile long with words you can't even figure out how to pronounce. So when I heard that General Mills was coming out with a dry dinner kit that was made with 100% whole grain, no trans fat, no artificial flavors, no artificial preservatives and no MSG I definitely wanted to give it a try.

It is called Good Earth and it is available in Mediterranean Chicken with angel hair pasta, Spicy Citrus Glazed Shrimp with angel hair pasta, Herb Crusted Chicken with mushroom risotto and Tuscan Chicken with penne pasta. We tried the Mediterranean Chicken with angel hair pasta and I have to say I was impressed.

As with most dry dinner kits, you have to provide the meat yourself in this case boneless, skinless chicken breasts. The directions were easy to follow and I loved that the angel hair was 100% whole grain. Other than my daughter picking out the small bits of tomatoes, the whole family enjoyed this meal. There were a few hard to understand words in the ingredients list but far less, in my opinion, than you'll find in many other dry dinner kits. As I've said before it is always nice to have stand-by meals.

Peach Pork Chops

Serves: 5

1 can (29 oz.) peach halves
5 pork loin chops (1-inch thick)
1 T. oil
Salt & pepper
1/4 c. brown sugar
1/2 tsp. cinnamon
1/4 tsp. ground cloves
1 can (8 oz.) tomato sauce
1/4 c. cider vinegar

Drain peaches, reserving 1/4 cup juice; set fruit and juice aside. In a large skillet, brown pork chops on both sides in oil; transfer to crock pot. Sprinkle with salt and pepper. In a bowl, combine brown sugar, cinnamon and cloves; mix well. Add tomato sauce, vinegar and reserved peach juice. Pour over the chops. Arrange peach halves on top. Cover and cook on low for 6-8 hours or until meat is tender.

Tips: Crock pot recipes are great for anytime of the year because they are a warm winter meal or keep you from using your oven in the summer. I liked these pork chops because the ingredients were simple and it was easy to put together.
