Candies in Bloom Candy Bouquet Giveaway

Orange Pan Rolls


Makes: 8 rolls

1 c. flour
1 1/2 t. baking powder
1/4 t. cream of tarter
1/4 t. salt
1 t. grated orange peel
4 T. butter
1/3 c. milk
2 T. butter, melted
2 T. sugar
1/4 t. nutmeg

In a medium bowl, combine flour, baking powder, cream of tarter and salt. Add orange peel; cut in butter and the mixture resembles coarse crumbs. Stir in milk until just moistened. Divide dough in eight equal pieces. With floured hands, roll each piece of dough into a ball. Place butter in a small bowl. Combine sugar and nutmeg in another small bowl. Dip balls in butter, then in sugar mixture. Evenly space in a greased 9-inch round baking pan. Bake at 450 degrees for 10-12 minutes or until golden brown.

Tips: These were really good little rolls with just the right amount of sweetness. Don't be fooled on the size though. The picture was taken with these four rolls on a bread plate. So if you're baking for a large crowd be prepared to double the recipe. These rolls did stick a bit to the pan because the sugar baked and burned on the pan. This might be avoided by greasing and flouring the pan first (just a suggestion). I used my Microplane Grater/Zester to get the orange peel just right. It is also great for grating chocolate. Garlic Mashed Potatoes

Serves: 4

6 large potatoes, peeled and quartered
2 garlic cloves, minced
1 to 1 1/2 c. milk
2 T. butter
Salt and pepper

In a large saucepan, boil the potatoes for 10-15 minutes or until softened. Drain water and pour potatoes in serving bowl (or return to pot if you prefer). Add 1 cup of milk, butter, garlic, salt and pepper. Mash with a potato masher. Add additional milk if you prefer creamier potatoes.

Tips: Delicious twist on traditional mashed potatoes and just as easy to put together. If you have dairy allergies (like my son) or just don't do dairy, I made these with soy milk for the whole family and they tasted great. No one even knew the difference. Pair these with Garlic Pork Chops and you'll have a whole meal for under $5.

Garlic Pork Chops

Serves: 4

4 pork chops (about 1 1/2 lbs.)
1 T. olive oil
2 garlic cloves, minced

In a large skillet, marinate the pork chops in the olive oil and garlic for at least 30 minutes in the refrigerator. Place skillet over medium-high heat and saute the chops for 6-8 minutes on each side or until no longer pink in the middle. The cooking time may vary depending on the thickness of the chops.

Tips: I love garlic so these pork chops were super simple to put together and had a wonderful flavor. The marinating is done in the skillet to save you from dirtying extra dishes. SKOY Cloth Giveaway

This giveaway has ended. For the longest time our family always used a sponge for the dishes and endless paper towels for spills, cleaning and messy hands. Then we started using SKOY cloths and our paper towel mindset changed completely.

I was introduced to SKOY cloths a little over a year ago when they donated a bunch of cloths to my MOPS group. My MOPS (Mothers of Preschoolers) group then had a baking/breakfast contest. I made my Cheese Egg Supreme and it was voted Best Egg Dish. Wahoo! As my prize, I won four SKOY cloths. I went home, introduced them to my husband who I think was a bit skeptical at first. Fast forward to now and I am still using the last two cloths in my kitchen and my husband uses them everyday too. Yes, they last that long! Our method is to have two out at once. One is for spills, wiping the counter and table, etc. The other is for the kids' hands and faces after meals. It is so much better than having to use paper towels all the time.

Here are some of the specifics about SKOY cloths: "It is a European made product and 100% biodegradable because it is made from a natural cotton and wood-based cellulose pulp. SKOY cloth is a chlorine-free product using water-based colors and inks. After an independent composting test, SKOY cloth broke down completely within 5 weeks. The SKOY cloth has an absorption factor of 15x its own weight and is equivalent to using 15 rolls of paper towels in an average home."

Now you might be wondering how you keep this little super cloth clean and unstinky. Simple, it is dishwasher, washer/dryer and microwave safe. I usually choose the microwave option and stick in it when damp for 1-2 minutes. This also softens dried up, stuck on bits inside your microwave so once the cloth has cooled use it to wipe down the inside.

I could go on and on about these cloths but the SKOY website does an excellent job of answering any questions you might have. Plus every bunch of SKOY cloths comes with a small instruction sheet. SKOY cloths are available online through the SKOY site as well as at Amazon.com. They cost $6.99 for a 4-pack through either place.

Bran Coffee Cake


Serves: 6

1/3 c. milk
1 egg
1/4 c. butter, melted
1 c. flour
1/4 c. sugar
2 t. baking powder
1/4 t. salt
1 c. bran flakes, crushed

Topping:
2 t. butter, softened
2 T. brown sugar
1/3 c. bran flakes, crushed

In a large bowl, combine milk, egg and butter. Combine flour, sugar, baking powder, and salt; stir into milk mixture. Add bran flakes. Spread into a greased 8-inch round baking pan. Combine topping ingredients; sprinkle over batter. Bake at 375 degrees for 18-22 minutes or until cake tests done. Serve warm.

Tips: My whole family enjoyed this light coffee cake the other morning. Any bran flakes will work - I only had Raisin Bran in the pantry so I measured out what I needed and took out the raisins. Time to Plant Your Garden

I love this time of year because I get to turn the soil in my garden box, buy my plants & seeds and start our garden. If you live in a warm winter climate you have probably been able to plant for awhile now. However if you live in a cold winter climate, the time to plan is coming closer. I want to encourage you to consider planting a garden no matter how big, small or non-existent your yard is. It is such an accomplishment to be able to eat fruits and vegetables that you have grown yourself and to be able to teach your kids about healthy eating and being outside.

If you are new to vegetable gardening, here are some tips:
  • Start small. Find a small plot in your backyard or even just a few large pots. This will keep you from getting overwhelmed as your summer gets busier. If this year goes well, you can always expand the operation next season.
  • Choose fruits and vegetables that are easy to grow and enjoyed by your family. For your first year, choose plants that produce quickly and are first-year producers. Plants such as zucchini, squash, lettuce, spinach, radishes, tomatoes and melons are easy and allow kids to watch the progress of their plants. However, don't plant lettuce and spinach if your family turns their noses up at the sight of salad.
  • Find a book to use as a guide. Of course there are countless number of online gardening resources to take advantage of. I suggest a book because you often want to look up a small piece of information as you're planting, such as planting depth or spacing. If you are already in your yard with your gloves and muddy shoes on the last thing you want to have to do is go inside to Google "plant spacing for tomatoes" and have to weed through the results to find that the answer is 1 1/2 to 4 feet apart. I use Sunset's Vegetable Gardening but it is no longer available. You can find some basic vegetable gardening books at Amazon.com.
  • Order online or find a local nursery that carries the varieties you want. There are advantages to both avenues. First, online you can often get a better description of the fruit or vegetable you are looking for as well as the option of several varieties. However, your plants often arrive very small and it will take awhile to get them going. Your local nursery will allow you to purchase your plants in the morning and have them in your garden by dinnertime. Be cautious about the advice given by nursery employees. Some can be very knowledgeable and extremely helpful in your garden endeavors and some are there just to get a paycheck and really have no gardening knowledge whatsoever. I use both avenues to pick the plants I want. I have had a lot of success with Gurney's for vegetable plants, vegetable seeds and small fruit. Also check out their sale plus get $20 off a $40 purchase.
  • Wait for the last frost, then start planting. Most plants need to be planted after the last danger of frost has past. However, some plants and seed such as lettuce, spinach, strawberries, radishes and carrots can be planted several weeks earlier. There are many other vegetables that can be planted early these are just the ones I have experience with. Depending on where you live, your soil might need to be amended to make it nutrient rich and productive. Talk to someone at your local Lowe's or Home Depot to determine what they recommend. Usually a few bag of garden soil, compost or top soil can do the trick.

Getting your garden started will take a weekend or two. After your garden is set, all you have left to do is water and harvest! If you want to go organic, look for soil amendments marked organic and use natural methods of weed and pest control. Unless you have irrigation set in your garden area, I suggest watering with a soaker hose to cut down on the work of daily watering.

Tropical Chicken Bake

Serves: 4

2 boneless, skinless chicken breasts
1 T. butter
2 medium sweet potatoes; peeled, cut into chunks & cooked
1 large firm banana, cut into 1/2 inch slices
2/3 c. mandarin oranges
2/3 c. pineapple tidbits
1/2 c. sweet-and-sour sauce
Hot, cooked rice

In a skillet over medium heat, brown chicken in butter. In an ungreased 2-qt. baking dish, combine sweet potatoes, bananas, oranges and pineapple. Top with chicken; pour sweet-and-sour sauce over all. Bake, uncovered, at 350 degrees for 25-30 minutes or until chicken reaches an internal temperature of 170 degrees. Serve over rice.

Tips: I know this recipe might sound odd with bananas in it but they blended in well and added to the flavor so don't be afraid to put them in. I'm not sure if it is because we live at a higher altitude or not, but my chicken took a while to cook so make sure yours is fully cooked before you take it out. If you would like, add a small amount of almonds or pecans on top (we always leave the nuts out of any recipes because of my daughter's nut allergies). Potato Topped Meatloaf

Serves: 4-5

1 can (14 oz.) brown gravy, divided
1 1/2 lbs. ground beef
1 c. bread crumbs
1/4 c. onion, finely chopped
1 egg, slightly beaten
1/2 t. salt
1/8 t. pepper
2 1/2 c. hot mashed potatoes (3-4 medium potatoes)
1 T. butter, melted
Paprika

Combine beef, bread crumbs, onion, egg, salt, pepper and 1/4 cup of gravy; mix well. Pat into a greased 9 x 5 loaf pan. Bake at 350 degrees for 1 hour. Remove from oven and carefully drain fat. Spread potatoes over top and sides of meatloaf. Drizzle with melted butter; garnish with paprika. Return to oven; bake additional 20 minutes. Let stand 5 minutes. Heat remaining gravy and serve with meatloaf slices.

Tips: I am very particular about my meatloaf. My mom's and mother-in-law's meatloaf recipes are usually the only two that I consider good enough to grace our table. But this one caught my attention with the potatoes on top and I though I would give it a chance. I will admit that it was a worthy opponent. Any jar or can of brown gravy will work since only a 1/4 cup needs to be measured. I always use my KitchenAid Stand Mixer when I mix meat otherwise it kills your arm. Lentil-Mashed Potato Bake

Serves: 6

1/2 c. lentils
6 large potatoes
2 T. butter
1/4 c. milk
1/2 c. sour cream
1/2 c. scallions, chopped
2 garlic cloves
1/4 t. salt
1/8 t. pepper
2 c. Cheddar cheese, shredded

In a small saucepan, bring 2 cups of water to a boil. Add the lentils. Return to a boil and cook the lentils 20-30 minutes or until tender. Drain excess water. Meanwhile, peel and quarter the potatoes. Boil in a large saucepan for 10-15 minutes, until tender, and drain. In a bowl, mash the boiled potatoes; add butter, milk, sour cream, scallions, garlic, salt and pepper. Stir to combine. Fold in cooked lentils. Spread into a lightly greased 13x9 baking dish. Top with cheese. Bake at 350 degrees for 15 -20 minutes

Tips: I had never made anything with lentils before and was intrigued to give them a try after seeing this recipe. Lentils are high in fiber and low in fat so they are the perfect addition to a meatless meal. My lentils took quite a while to cook but that might have been because I cook at high altitude. I also used 1 cup of Cheddar cheese and 1 cup of Jack cheese to give this a little more flavor but I left it as one cheese in the ingredients to make it less difficult. Tuscan Soup


Serves: 4

1 small onion, chopped
1 small carrot, sliced
1 T. oil
2 cans (14.5 oz. each) chicken broth
1 c. water
3/4 t. salt
1/4 t. pepper
1 can (15 oz.) great northern beans, rinsed and drained
2/3 c. uncooked small pasta
3 c. thinly sliced spinach

In a large saucepan, saute onion and carrot in oil over medium-high heat until vegetables are tender. Add broth, water, salt and pepper; bring to a boil. Stir in beans and pasta; return to a boil. Reduce heat; cover and simmer for 15 minutes or until past is cooked, stirring occasionally. Add spinach; heat through.

Tips: I loved this soup with the combination of beans, pasta and spinach. I used large shell pasta but any small pasta will work. Although this soup is meatless, if you want to make it vegetarian try using vegetable broth in place of the chicken broth.
