Oven Baked Ritz Chicken

Serves: 2

2 boneless, skinless chicken breasts
1/4 c. plain yogurt
10 whole wheat Ritz crackers, crushed into crumbs
1/8 t. pepper
1/8 t. garlic salt
1 t. Parmesan cheese

In a small bowl, combine cracker crumbs, pepper, garlic salt and cheese; spread on small plate. Dip chicken in yogurt and roll in crumb mixture. Place chicken in a greased square dish and bake, covered, at 350 degrees for 35-40 minutes or until internal temperature reaches 170 degrees.

Tips: This was a super, easy and tasty baked chicken recipe. You can use fat-free plain yogurt to cut down the fat and reduced-fat Ritz. I'm sure regular Ritz would taste fine but I liked the extra flavor that came from the whole-wheat crackers. I adapted this recipe for two chicken breasts but it can easily be doubled or tripled depending on the size of your crowd. Just bake in a larger pan and increase the baking time about 5 minutes for each additional chicken breast. I also shared this recipe at Ann Kroeker's Food on Fridays.

Broiler Pork Chops

Serves: 4

4 pork chops
1/4 c. brown sugar
1/4 c. ketchup
1 T. Worcestershire sauce
1 T. soy sauce
1 T. thyme
1 t. garlic salt
1/4 t. cayenne pepper (aka. ground red pepper)

Combine brown sugar, ketchup, Worcestershire sauce and soy sauce in a small bowl. Set aside 1/4 cup of sauce to serve with dinner. In a small dish, combine thyme, garlic salt and cayenne pepper; rub into both sides of pork chops. Place pork chops on broiler rack coated with non-stick spray; cook 6-8 minutes on each side. Baste with remaining sauce while broiling.

Tips: These pork chops were very easy to get ready and cooked quickly on the broiler. Make sure to keep an eye on them because meat can get overcooked and dried out easily because it cooks so quickly on the broiler. If your family enjoys pork, watch for a large pork tenderloin to go on sale. My Safeway had it on sale this week for $1.69/lb. I then had the meat counter cut it into two roasts and 16 pork chops. My family will get at least 6-7 meals out of a $14 piece of meat! I also shared this recipe at The Grocery Cart Challenge's Recipe Swap.

Swedish Meatballs

Serves: 4

1 lb. ground beef
1 egg, lightly beaten
3/4 c. ketchup
1/2 c. water
1/3 c. sugar
4 T. soy sauce
2 T. Worcestershire sauce
2 T. vinegar
1 c. pineapple chunks
Hot, cooked rice

Combine ground beef and egg; make into golf ball size meatballs. In a bowl, combine remaining ingredients excluding pineapple chunks and rice. Place meatballs in one layer in a greased 2-quart casserole dish. Pour sauce over meatballs. Bake at 325 degrees for 1 hour to 1 hour 15 minutes. Add pineapple chunks over top in the last 5-10 minutes. Serve over rice.

Tips: I have no idea if this meatball recipe is anything like what they eat in Sweden but it sure is good. My daughter loves meatballs and never fails to eat well when that's our dinner. I also shared this recipe at All the Small Stuff's Tuesdays at the Table.

Chicken & Strawberry Salad

Serves: 4

2 c. chicken breast, cooked & chopped
2 c. small strawberries, cut into quarters
1/4 c. red onion, chopped
2 T. golden raisins
1 tsp. thyme
1 T. olive oil
1 T. balsamic vinegar
1/2 tsp. paprika
1/8 tsp. salt
1/8 tsp. pepper
4 c. torn lettuce or salad greens

In a medium bowl, combine first 4 ingredients. In a small bowl, whisk together remaining ingredients excluding lettuce. Pour oil/vinegar mixture over chicken mixture; toss to coat. Cover and chill for 1 hour. Serve over lettuce.

Tips: This was a great refreshing summer salad and I was able to use strawberries from my garden. Hopefully later in the summer I will be able to use the lettuce blend I have growing as well. I used iceberg lettuce because that is what I had on hand but this salad would be excellent with something a bit fancier.
